Tantalizing Roasted Potatoes, Green Beans and Veggies
Ingredients
- 12 baby Yukon gold potatoes, washed
- 1 lb. fresh green beans, trimmed and washed
- 1 of each colored bell pepper (red, yellow, orange, green) cut into pieces
- 1 red onion, cut into wedges
- 2 large portabella mushroom caps, gills and stems removed and cut into slices
- Salt, black pepper, garlic powder
- Olive oil
- Balsamic vinaigrette
Instructions
- Place all the veggies and potatoes in a large bowl.
- Season and drizzle with olive oil.
- Mix well.
- Place in shallow baking dish (sprayed with PAM).
- Drizzle with vinaigrette and mix well.
- Roast in 400 oven for 15-20 minutes or until potatoes are done.
- Stir while cooking.
Notes
*****You can start the process of cooking by covering with foil and cook for 15 minutes, remove foil, mix and cook until they become crispy and potatoes are done.
These veggies can also be placed in a grill basket that goes on your outside grill. If you do this method, do steps 1-3, place in basket that is placed on top of a baking sheet.
Then drizzle the vinaigrette over the veggies in the basket. The baking sheet will catch the drippings. If you have some type of basting sauce that you are using on your entrée on the grill you can baste the veggies in the basket as well.
