Sweet Potato and Marshmallow Waffles
Ingredients
- 1 medium sweet potato or yam
- 1 ½ c. flour
- ½ t. baking powder
- ½ t. baking soda
- ½ t. ground cinnamon
- ¼ t. salt
- ¾ c. buttermilk
- ⅓ c. oil, plus more for brushing on waffle iron
- 3 T. brown sugar
- 1 large egg plus 1 large egg white
- Syrup
- 1 ½ c. mini marshmallows
Instructions
- Preheat oven 350. Poke potato with fork and bake until soft in center. Let cool, then scoop out flesh and puree in food processor until smooth.
- Turn oven down to 200 (to keep cooked waffles warm). Preheat waffle iron to medium high.
- Whisk together flour, baking powder, soda, cinnamon and salt in a bowl. In another bowl, whisk the milk, ½ c. of the puree, oil, brown sugar, egg and egg white.
- Pour the buttermilk mixture into the flour mixture and gently stir until incorporated (ok, if there are lumps).
- Lightly brush top and bottom of waffle iron with oil. Fill each section about ¾ of the way up (there should be some of the waffle iron showing.)
- Close and cook until golden brown and slightly crisp, about 6-10 minutes.
- Keep waffles warm in oven covered with foil until all are cooked.
- Switch the oven to broil, drizzle each waffle with a little syrup and ¼ c. of marshmallows. Broil until golden, about 15-30 seconds. Serve with additional syrup.
