Ingredients
  • 8 c. rough chopped fresh strawberries
  • ¾ c. sugar, divided
  • 2 T. cornstarch
  • 2 T. lime zest
  • 2 T. fresh lime juice
  • 1 c. plus 3 T. butter, softened
  • 1 egg yolk
  • 2 c. flour
  • ⅔ c. old-fashioned oats
  • 1 c. sugar
  • 1 ½ t. baking powder
  • ½ t. salt
Instructions
  1. CRUST: Spray 13x9” baking pan with spray with flour. Line pan with parchment paper, letting excess extend over sides of pan.
  2. In bowl, beat butter and yolk with mixer until smooth and creamy.
  3. In smaller bowl, whisk together flour, oats, sugar, baking powder and salt.
  4. Gradually add flour mixture to butter mixture, beating until just combined.
  5. Turn mixture onto a work surface and gently knead until a crumbly dough forms.
  6. Press ¾ of the dough into prepared pan.
  7. Reserve the remaining dough for later.
  8. FILLING: Preheat oven 375. In large bowl, gently stir together berries and ½ c. sugar. Let stand 15 minutes.
  9. Drain berries, discarding liquid.
  10. Stir in cornstarch, zest and lime juice and remaining ¼ c. sugar into berries.
  11. Pour mixture into prepared CRUST in pan.
  12. Crumble the remaining crust onto top of berries.
  13. Bake until top is lightly browned and filling is hot and bubbly, about 45-60 minutes.
  14. Let cool completely in pan.
  15. Using excess parchment paper as handles, remove from pan before cutting into bars.
  16. Cut into bars and store in airtight container. I like to keep in refrigerator.

****You can substitute the fruit for any other berries you like.
