Sweet and Tangy Strawberry Lime Bars
Ingredients
- 8 c. rough chopped fresh strawberries
- ¾ c. sugar, divided
- 2 T. cornstarch
- 2 T. lime zest
- 2 T. fresh lime juice
- 1 c. plus 3 T. butter, softened
- 1 egg yolk
- 2 c. flour
- ⅔ c. old-fashioned oats
- 1 c. sugar
- 1 ½ t. baking powder
- ½ t. salt
Instructions
- CRUST: Spray 13x9” baking pan with spray with flour. Line pan with parchment paper, letting excess extend over sides of pan.
- In bowl, beat butter and yolk with mixer until smooth and creamy.
- In smaller bowl, whisk together flour, oats, sugar, baking powder and salt.
- Gradually add flour mixture to butter mixture, beating until just combined.
- Turn mixture onto a work surface and gently knead until a crumbly dough forms.
- Press ¾ of the dough into prepared pan.
- Reserve the remaining dough for later.
- FILLING: Preheat oven 375. In large bowl, gently stir together berries and ½ c. sugar. Let stand 15 minutes.
- Drain berries, discarding liquid.
- Stir in cornstarch, zest and lime juice and remaining ¼ c. sugar into berries.
- Pour mixture into prepared CRUST in pan.
- Crumble the remaining crust onto top of berries.
- Bake until top is lightly browned and filling is hot and bubbly, about 45-60 minutes.
- Let cool completely in pan.
- Using excess parchment paper as handles, remove from pan before cutting into bars.
- Cut into bars and store in airtight container. I like to keep in refrigerator.

****You can substitute the fruit for any other berries you like.
