Super-Chocolate Brownie Cookies
Ingredients
  • 1 lb. semisweet chocolate, chopped
  • 4 T. butter
  • 4 large eggs, room temperature
  • 1 ½ c. sugar
  • 1 t. vanilla extract
  • ¼ t. salt
  • ½ c. flour, sifted
  • ½ t. baking powder
  • 1 (12-oz.) bag semisweet chocolate chips
Instructions
  1. In large bowl set over saucepan of simmering water (or a double boiler), melt the chopped chocolate with butter.
  2. Stirring a few times until smooth.
  3. In another large bowl, with a hand mixer, beat eggs with sugar until thick and pale.
  4. Beat in vanilla and salt.
  5. With a rubber spatula, fold in melted chocolate, then fold in flour and baking powder.
  6. Stir in chocolate chips.
  7. Scrape batter into shallow baking dish, cover and freeze until well chilled and firm, at least 1 hour.
  8. Preheat oven 350 and line 2 baking sheets with parchment paper.
  9. Working in batches, scoop 2 T. size mounds of dough onto the baking sheets, about 2” apart.
  10. Bake 10 minutes, until the cookies are dry around the edges and crack on top.
  11. Let cool on baking sheets for 10 minutes
  12. Transfer to rack to cool completely.
  13. Store in airtight container at room temperature for 4-6 days.
