Ingredients
  • CREAMY DILL SPREAD:
  • ¼ c. olive oil mayo
  • ¼ c. sour cream
  • ¼ c. chopped fresh dill
  • 1 T. fresh minced lemon zest
  • Salt, black pepper to taste
  • 1. Whisk together all the ingredients in a bowl.
  • 2. Season to taste.
  • 3. Refrigerate until needed.
  • 8 slices pumpernickel bread
  • 2 c. fresh baby spinach
  • 8 oz. sliced dill Havarti cheese
  • ½ zucchini, cut crosswise in half, thinly sliced lengthwise
  • ½ yellow summer squash, cut crosswise in half, thinly sliced lengthwise
  • ½ red bell pepper, seeded and sliced into rings
  • 1 c. thinly sliced cucumber
  • ½ c. thinly sliced red onion
Instructions
  1. Spread dill spread on one side of each slice of bread.
  2. Layer: spinach, cheese, zucchini, squash, bell pepper, cucumber, and red onion on four of the slices of bread.
  3. Top with remaining bread slices. Cut in half.

*****You can change up the veggies and cheese choices, as well as your spread.
