SPINACH AND KALE SAUTE
Ingredients
- 1 (5-oz.) container cleaned and prepared fresh Kale
- 1 (5-oz.) container cleaned and prepared fresh Spinach
- 1 c. chopped red onion
- 4 minced shallots
- 2 T. minced garlic
- 1 (7-oz.) container fresh pico de gallo
- 2 T. chili pepper paste
- Salt, red/black pepper/garlic powder
- Olive oil
- Balsamic vinegar
Instructions
- In large skillet, drizzle olive oil and heat over medium temperature.
- Saute onion, shallot and garlic until tender.
- Add pico and chili pepper paste and blend well.
- Add kale and spinach and mix.
- Reduce heat and cover. Let simmer for 2-4 minutes or until spinach/kale begins to wilt.
- Turn heat off. Season to taste and drizzle with vinegar. Serve.
Notes
*****This dish looks better when served right away. As it sits, the spinach/kale continue to wilt. They still taste great just not as pretty.
