  • 2 lbs. yams, peeled and cut into 1” cubes
  • PAM
  • Salt, black pepper
  • Ground cumin
  • 2-3 celery ribs, diced
  • 1-2 jalapeno peppers, seeded and finely chopped
  • ½ of red onion, diced
  • ½ green bell pepper, diced
  • 3 T. light brown sugar
  • 3 T. fresh chopped parsley
  • 6 T. white vinegar
  • 1 T. olive oil
  • 1-2 t. Tabasco sauce
  • 2 t. mustard
  • 4 slices hickory or peppered bacon, cooked and crumbled, optional
  • Fresh parsley leaves, garnish
  1. Arrange potatoes in even layer in 15x10” baking pan.
  2. Spray PAM all over the yams and sprinkle with salt.
  3. Bake 400 for 20-25 minutes or until tender. Let cool slightly.
  4. Stir together the celery, peppers, onions, sugar, parsley, vinegar, olive oil, Tabasco, mustard. Mix well and season with salt, pepper and cumin.
  5. Add the yams to the mixture. Toss gently and taste for seasoning.
  6. Sprinkle with crumbled bacon and garnish with parsley.
*****Can be served warm or chilled.
