Spicy-Sweet Charred Collards Slaw

SPICY-SWEET CHARRED COLLARDS SLAW
½ c. canola oil
1/3 c. apple cider vinegar
1/3 c. firmly packed light brown sugar
1 T. kosher salt
1 T. dry mustard
1 t. crushed red pepper
1 lb. shredded stemmed collard greens
1 (12-oz.) pkg. coleslaw mix
1 red bell pepper, thinly sliced

  1. In large bowl, whisk together oil, vinegar, brown sugar, salt, dry mustard and crushed red pepper until sugar dissolves.
  2. Heat 12” cast-iron skillet over medium-high heat until hot.
  3. Working in batches, add collards to skillet.
  4. Cook, turning occasionally, until edges of collards begin to brown and color is bright green all over.
  5. Transfer collards to bowl with dressing.
  6. Stir in coleslaw mix and bell pepper. Taste for seasonings.
  7. Serve warm or cold.
