Spicy Honey-Glazed Carrots

4 T. melted butter
3 T. good quality honey
1 T. light brown sugar
Kosher salt, black pepper
½ t. ground cinnamon
½ t. ground nutmeg
2 lbs. baby carrots, peeled and trimmed
1 T. thinly sliced fresh chives
1. Preheat oven 400.
2. Stir together everything except carrots and chives in a bowl.
3. Reserve 2 T. of the mixture.
4. Pour remaining butter mixture over carrots and toss to cover.
5. Spread in single layer on 2 baking sheets and bake for 25-30 minutes or until tender.
6. Toss roasted carrots with reserved butter mixture.
7. Transfer to serving platter and garnish with chives.
