Spicy Ham and Potato Chip Tortilla Omelet

SPICY HAM AND POTATO CHIP TORTILLA OMELET
1 dozen large eggs
1 (5-oz.) bag jalapeno potato chips, lightly crushed
¼ c. extra-virgin olive oil
½ lb. good quality ham, diced
1 bunch green onions, chopped
Salt, black pepper
Paprika

  1. Preheat broiler and place rack 8” from heat.
  2. In bowl, beat eggs.
  3. Add chips and mash to break them up.
  4. In a large ovenproof nonstick skillet, spray with PAM add the olive oil and heat.
  5. Add the ham and green onions and cook for 1-2 minutes.
  6. Add the eggs and cook until set on the bottom and side, about 2-3 minutes. Add seasoning as needed.
  7. Broil the tortilla omelet for about 2 minutes, until top is lightly browned and eggs are set.
  8. Slide the omelet onto a serving platter and cut into wedges and sprinkle with paprika.
    *You can change up the flavor of chips and the meats. You can also add cheese if you desire.
