Spicy Ham and Potato Chip Tortilla Omelet
SPICY HAM AND POTATO CHIP TORTILLA OMELET
1 dozen large eggs
1 (5-oz.) bag jalapeno potato chips, lightly crushed
¼ c. extra-virgin olive oil
½ lb. good quality ham, diced
1 bunch green onions, chopped
Salt, black pepper

- Preheat broiler and place rack 8” from heat.
- In bowl, beat eggs.
- Add chips and mash to break them up.
- In a large ovenproof nonstick skillet, spray with PAM add the olive oil and heat.
- Add the ham and green onions and cook for 1-2 minutes.
- Add the eggs and cook until set on the bottom and side, about 2-3 minutes. Add seasoning as needed.
- Broil the tortilla omelet for about 2 minutes, until top is lightly browned and eggs are set.
- Slide the omelet onto a serving platter and cut into wedges and sprinkle with paprika.
*You can change up the flavor of chips and the meats. You can also add cheese if you desire.
