Ingredients
  • 2 oz. sliced good quality pepperoni
  • 2 garlic cloves, sliced
  • 1 c. Panko bread crumbs
  • ¼ c. plus 2 T. extra-virgin olive oil
  • 2 lbs. fresh broccoli, trimmed and cut into long spears
  • Salt, black pepper
  • 2 T. Dijon mustard
Instructions
  1. Preheat oven 425.
  2. In mini-food processor, pulse pepperoni with garlic until finely chopped.
  3. Add the panko and pulse until combined.
  4. In skillet, heat 2 T. olive oil. Add panko mixture and cook, stirring, until crisp and golden.
  5. Scrape onto a plate and let cool.
  6. In a bowl, toss broccoli with remaining olive oil and season with salt and pepper.
  7. Spread on baking sheet and roast for 15 minutes, turning once, until tender and browned in spots.
  8. Spread mustard on one side of broccoli and press broccoli into panko mixture.
  9. Transfer to serving platter and sprinkle with remaining crumbs and serve.
