Spicy Crinkle Cut Yams
Ingredients
- 1 (10-oz.) Marketside Crinkle Cut Sweet Potatoes
- 1 (7-oz.) white boiler onions, peeled and halved
- 2 fresh jalapenos, seeded and minced
- 3-4 sprigs fresh rosemary
- Olive oil
- Kosher salt, black pepper
- Balsamic glaze
Instructions
- Line a baking sheet with heavy duty foil and spray with PAM.
- Spread the potatoes on the sheet to make one even layer.
- Drizzle with olive oil and season with salt and pepper. With your hands, mix well to coat and spread again.
- Top with onions and jalapenos.
- Drizzle with more olive oil and add a little more salt and pepper.
- Lay the rosemary sprigs across top.
- Drizzle with more olive oil and balsamic glaze.
- Bake 450 oven for 15-20 minutes, until potatoes and onions are tender. You can stir the potatoes around about half way through cooking.
- Remove from oven, taste for seasoning.
- Drizzle with more balsamic glaze.
