Special Broccoli-Potato Supreme Casserole
SPECIAL BROCCOLI POTATO SUPREME CASSEROLE
3 c. hot mashed potatoes (store bought or homemade)
4 oz. cream cheese, soft
¼ c. milk
1 large egg
2 T. butter, soft
Salt, black pepper
1 (2.8-oz.) can French-fried onions, divided
5 c. fresh broccoli florets
1 c. shredded cheddar cheese
- In bowl, combine potatoes, cream cheese, milk, egg, butter, salt and pepper. Beat until smooth.
- Fold in half of onions.
- Spread into bottom and up sides of greased 13×9” baking dish, forming a shell.
- Bake uncovered at 350 for 20 minutes or until edges are lightly browned.
- Cook broccoli in small amount of salted water until crispy-tender. Drain.
- Season broccoli with salt and pepper.
- Place broccoli in potato nest.
- Sprinkle with cheese and remaining onions.
- Bake another 10 minutes.
