Soba Noodle Stir Fry
Ingredients
  • 8 oz. uncooked soba noodles
  • 1 T. olive oil
  • 2 c. sliced shitake mushrooms
  • 1 red bell pepper, cut into thin strips
  • 1 t. red pepper flakes
  • 1 T. minced garlic
  • 2 c. shredded napa cabbage
  • ½ c. veggie broth
  • 2 T. tamari or soy sauce
  • 1 T. rice wine
  • 2 t. cornstarch
  • 1 (14-oz.) pkg. firm tofu, drained and cut into 1” cubes
  • 2 green onions, thinly sliced
Instructions
  1. Cook noodles according to pkg. directions. Drain and set aside.
  2. Heat oil in large nonstick skillet or wok over medium heat.
  3. Add mushrooms, bell pepper, pepper flakes and garlic.
  4. Cook and stir until mushrooms are tender.
  5. Add cabbage.
  6. Cover and cook 2-3 minutes or until cabbage is wilted.
  7. Combine broth, tamari, rice wine and cornstarch in small bowl.
  8. Stir sauce into veggie mixture.
  9. Cook 2 minutes or until sauce is thickened.
  10. Stir in tofu and noodles.
  11. Toss gently until heated through.
  12. Sprinkle with green onions.
  13. Remove from heat and serve.
