Soba Noodle Stir Fry
Ingredients
- 8 oz. uncooked soba noodles
- 1 T. olive oil
- 2 c. sliced shitake mushrooms
- 1 red bell pepper, cut into thin strips
- 1 t. red pepper flakes
- 1 T. minced garlic
- 2 c. shredded napa cabbage
- ½ c. veggie broth
- 2 T. tamari or soy sauce
- 1 T. rice wine
- 2 t. cornstarch
- 1 (14-oz.) pkg. firm tofu, drained and cut into 1” cubes
- 2 green onions, thinly sliced
Instructions
- Cook noodles according to pkg. directions. Drain and set aside.
- Heat oil in large nonstick skillet or wok over medium heat.
- Add mushrooms, bell pepper, pepper flakes and garlic.
- Cook and stir until mushrooms are tender.
- Add cabbage.
- Cover and cook 2-3 minutes or until cabbage is wilted.
- Combine broth, tamari, rice wine and cornstarch in small bowl.
- Stir sauce into veggie mixture.
- Cook 2 minutes or until sauce is thickened.
- Stir in tofu and noodles.
- Toss gently until heated through.
- Sprinkle with green onions.
- Remove from heat and serve.
