Ingredients
  • 1 lb. lean ground beef
  • 2 c. hot mashed potatoes, instant or leftovers
  • 4 oz. cream cheese, cubed
  • 1 c. shredded sharp cheddar cheese
  • 2 T. minced garlic
  • 1 c. chopped onion
  • 1 c. chopped green bell pepper
  • 4 c. frozen mixed veggies, thawed
  • 1 c. beef gravy (use the packets of instant like McCormick)
  • Salt/red/black pepper
Instructions
  1. Heat oven 375.
  2. Brown meat in a large skillet and add the onion and bell pepper. Season.
  3. Drain off any excess fat.
  4. In a bowl, mix the potatoes, cream cheese, ½ c. of cheddar cheese and garlic. Season.
  5. Add veggies and gravy to the meat. Mix well. Taste again for seasoning.
  6. Spoon the meat mixture into a 9” square baking dish.
  7. Cover with the potato mixture and remaining cheddar cheese.
  8. Bake 20 minutes or until heated through.
Notes
*****Great way to use leftover mashed potatoes, colcannon or veggies.
