Simple Shepherd's Pie
Ingredients
- 1 lb. lean ground beef
- 2 c. hot mashed potatoes, instant or leftovers
- 4 oz. cream cheese, cubed
- 1 c. shredded sharp cheddar cheese
- 2 T. minced garlic
- 1 c. chopped onion
- 1 c. chopped green bell pepper
- 4 c. frozen mixed veggies, thawed
- 1 c. beef gravy (use the packets of instant like McCormick)
- Salt/red/black pepper
Instructions
- Heat oven 375.
- Brown meat in a large skillet and add the onion and bell pepper. Season.
- Drain off any excess fat.
- In a bowl, mix the potatoes, cream cheese, ½ c. of cheddar cheese and garlic. Season.
- Add veggies and gravy to the meat. Mix well. Taste again for seasoning.
- Spoon the meat mixture into a 9” square baking dish.
- Cover with the potato mixture and remaining cheddar cheese.
- Bake 20 minutes or until heated through.
Notes
*****Great way to use leftover mashed potatoes, colcannon or veggies.
