Ingredients
  • 6-7 lb. packaged corned beef (found in meat section of grocery store or ask your butcher)
  • Water to cover
  • 1 t. prepared mustard
  • ½ c. dark brown sugar
Instructions
  1. When shopping for corned beef, buy the largest you can find. There is a lot of shrinkage in the cooking process. Sometimes, especially during the holidays, butchers will order larger ones or you can buy 2 to make up the equal weight.
  2. Using a large heavy pot (Magnalite Dutch Oven), place meat in bottom of pot and cover with water. You will see a packet of peppercorn seasoning that comes with the corned beef. Open packet of seasoning and add to the water.
  3. Bring the water to a rolling boil then reduce heat to a simmer.
  4. Simmer until beef is fork tender, usually about 4 hours. You will have to add hot water to keep the corned beef totally covered in water.
  5. When the beef is fork tender, remove it from the pot to a jelly roll pan with low sides.
  6. Next take some other heavy cookware and balance on top of the cooked corned beef. This is to compress the meat and keep it from becoming stringy.
  7. Leave the meat to compress on your counter overnight. IT IS CURED AND WILL NOT SPOIL!
  8. Before you serve it, rub the fatty side of beef with the mustard. Then cover the mustard with the brown sugar, pressing into the meat.
  9. Wrap in brown paper and tie with twine.
  10. Place on cookie sheet or jelly roll pan and bake at 250 for 2 hours. This melts the sugar and forms a crust on top of the meat.
  11. Remove from oven and let rest 5-8 minutes. Slice against the grain.
Notes
*****I know this seems like a very tedious process but it really is not. This dish makes a most wonderful presentation and is just fabulous. You will be the talk of the town with this dish. Makes great sandwiches with leftovers. Don’t forget Corned Beef and Hash!!! There are so many ways to serve this dish. You can just put a basket of nice rolls and let guests make little sandwiches. I promise you that this dish is a hit!!!!!!!!!!
