Simple and Different Cauliflower Stir-Fry

2 (10-oz.) bags for fresh cut cauliflower (steamer bag type), cut in bite-size pieces
Olive oil
2 T. minced garlic
2 T. good quality soy sauce
2 T. Sriracha
Juice of 1 large lemon
2 T. Marzetti Simple Dressing Lemon Vinaigrette
2 green onions, chopped
1 c. cherry tomatoes, halved, optional
1. In large non-stick skillet, drizzle olive oil to cover bottom. Heat over medium heat.
2. When hot, add the cauliflower and saute until it starts to brown on all sides. Constantly move around with a spoon. Takes about 2-4 minutes.
3. Halfway through cooking cauliflower, add garlic and cook, stirring constantly.
4. Add the soy sauce, Sriracha, lemon juice, vinaigrette.
5. Stir to mix.
6. Taste for seasoning. I usually do not add any because of the saltiness of the soy sauce and the peppery taste from the Sriracha. You add as you like.
7. Add the cherry tomatoes and green onions and cook until heated through. If you don’t want the tomatoes, omit and just add the green onions. Stir and serve.
