Ingredients
  • 4 fresh zucchinis, cut in half and core out pulp
  • ½ c. basil pesto
  • 2 T. minced garlic
  • Salt, black pepper
  • 1 pt. red cherry tomatoes
  • 1 pt. yellow cherry tomatoes
  • Italian bread crumbs
  • 1 container marinated mozzarella balls
  • Freshly grated parmesan cheese
  • Fresh basil leaves, rough chop
Instructions
  1. Place the cored zucchinis in a baking dish.
  2. Mix the basil pesto and garlic.
  3. Brush over the zucchini.
  4. Sprinkle with salt and pepper.
  5. Place cherry tomatoes, alternating colors, down the center of zucchini.
  6. Sprinkle the top of zucchini with bread crumbs.
  7. Bake in 350 oven for 30 minutes or until tender.
  8. Place the mozzarella balls in between the tomatoes.
  9. Place back in oven under broil and cook until golden and bubbly.
  10. Remove from oven, sprinkle with grated parmesan cheese and basil leaves.
