Scrumptious Cherry Tomato and Goat Cheese Tarts
Ingredients
- 2 pts. yellow cherry tomatoes, halved
- 2 pts. red cherry tomatoes, halved
- 2 Vidalia onions, thinly sliced
- Kosher salt, black pepper
- Good quality Balsamic vinegar
- 4 sheets puff pastry
- ½ c. sour cream
- 2 T. Dijon mustard
- 8 oz. crumbled goat cheese
- Chopped chives, garnish
- 2 egg whites, beaten
Instructions
- In a bowl, combine the tomatoes, onions, salt and pepper. Mix well.
- Drizzle balsamic vinegar over tomatoes. Stir to mix well. Cover and marinate overnight (up to 2 days).
- Defrost puff pastry in refrigerator.
- Mix sour cream and mustard in small bowl, set aside.
- TO ASSEMBLE: On a baking sheet, place one sheet of defrosted puff pastry. Crimp the 4 sides to form a lip. Place in 375 and bake until slightly golden (DO NOT OVERBAKE), 5-6 minutes. Remove from oven.
- Spoon a thin layer of the sour cream mixture evenly over the puff pastry.
- Spoon the tomato/onion mixture evenly over the semi-baked crust.
- Sprinkle the crumble goat cheese over the tomato mixture.
- Brush the exposed sides of the puff pastry with the egg wash.
- Place back in oven and cook until golden and cheese is melted and bubbly. This can take about 30 minutes. Depends on your oven and how much you cooked the first stage.
- Fix the remaining 3 sheets of puff pastry.
- Remove from oven. Sprinkle with chives. Serve.
Notes
*****Any leftover marinated tomatoes make a great salad. You can also use pie crusts for this. Just pre-bake the crusts before putting the filling. I have also done the puff pastry without pre-baking. It is okay but the center of the puff pastry will not be as crispy as the edges. You can add multiple of items to this dish like cooked diced eggplant, crumble meats, shrimp, chicken (all cooked before placing on puff pastry).
