Savory Yam and Brussels Sprout Salad
Ingredients
- 1 ½ lbs. Brussels sprout, trimmed and thinly sliced
- 3 c. yams, peeled and cut into ½” cubes
- 2 ½ c. Vidalia onion, sliced
- Olive oil
- Crushed red pepper flakes
- Salt
- 3 T. cider vinegar
- 1 T. Dijon mustard
- 2 t. honey
Instructions
- Preheat oven 450. Line 2 large baking sheets with foil and lightly brush with olive oil.
- Place the Brussels sprout, yams and onion in a bowl and drizzle with olive oil, add red pepper flakes and salt. Toss to mix well.
- Arrange in a single layer on baking sheets.
- Roast, stirring occasionally until golden brown and tender, 20-30 minutes.
- In a large bowl, whisk together vinegar, mustard, honey and 2 T. olive oil.
- Add veggies, toss to coat and taste for seasoning.
