Satisfying Yukon Gold and Green Bean Casserole


SATISFYING YUKON GOLD AND GREEN BEAN CASSEROLE
12-16 small or medium size Yukon Gold potatoes, cut in half or quarters
8 oz. fresh green beans, stemmed
12 whole garlic cloves
1 pint assorted colored cherry tomatoes, whole or halved
6 springs fresh thyme leaves
Olive oil
Kosher salt/black pepper
Balsamic glaze or vinegar
Shavings for fresh Parmesan cheese, garnish
- Spray a baking dish that will hold all your ingredients (at least 3-4 quart) with PAM.
- In a bowl combine all the ingredients, season with salt and pepper.
- Drizzle with olive oil and mix well.
- Place in baking dish and cover with foil and bake in 350 oven for 30-40 minutes or until potatoes are tender.
- Remove from oven and drizzle with balsamic glaze or vinegar. Toss. Taste for seasoning. Garnish with Parmesan cheese shavings.
