ROBUST GREEK-STYLE CHICKEN WRAPS

1 c. grape tomatoes, halved
¼ c. pitted Kalamata olives, rough chop
3 T. crumbled feta cheese
2 T. fresh lemon juice
1 T. chopped fresh oregano
1 T. olive oil
Red pepper
1 c. shredded skinless, boneless rotisserie chicken breast
2 small cucumbers, chopped
6 T. plain hummus
6 (8”) whole-wheat flour tortillas
1. Place tomatoes, olives, feta, juice, oregano, pepper, chicken and cucumber in large bowl.
2. Toss to combine. Taste for seasoning.
3. Spread 1 T. hummus over 1 side of each tortilla.
4. Top each tortilla with about ½ c. of chicken mixture.
5. Roll up and cut in half.
