Refreshing Watermelon Cake
Ingredients
- ½ c. miniature semisweet chocolate chips, extra for decorating as seeds
- 1 box Betty Crocker Super Moist white cake mix
- 1 (.13-oz.) cherry flavored or other red-colored unsweetened soft drink mix
- 1 container whipped fluffy white frosting
- Green and red food coloring
- Green jelly beans
Instructions
- Heat oven 350. Spray 2 (9”) round baking cake pans with PAM.
- In a small bowl, toss ½ c of the chocolate chips with 1 T. of the cake mix.
- In large bowl, prepare the remaining cake mix by following directions on the box and also add the drink mix. Mix well.
- Stir in the ½ c. chocolate chips.
- Pour into pans.
- Bake following directions on cake box. Remove from oven and let cool.
- In small bowl, stir 1 c. of frosting with 10-12 drops green food coloring.
- Stir in 10-12 drops of red food coloring to the remaining frosting.
- Frost the sides of the cake with green food coloring and press the green jelly beans into the frosting.
- Frost top of cakes with red frosting. Press the some of the remaining chocolate chips into the frosting to look like seeds.
- Cut into wedges to serve. Store loosely covered.
