Ingredients
  • 4 c. fresh peaches, peeled and chopped
  • 1 unbaked 9” deep dish pie crust
  • 1 c. sugar
  • ⅓ c. flour
  • ⅛ t. salt
  • 2 eggs, beaten
  • ½ c. sour cream
  • ½ c. sugar
  • ½ c. flour
  • ¼ c. butter
  • 1 fresh peach, sliced for garnish
  • Vanilla ice cream
  • Fresh mint sprigs
Instructions
  1. Preheat oven 350.
  2. Place the 4 c. of chopped peaches into pie crust.
  3. In a bowl, combine the 1 c. sugar, ⅓ c. flour and salt. Mix well.
  4. Add eggs and sour cream and blend.
  5. Spoon mixture over peaches.
  6. In another bowl, combine ½ c. sugar, ½ c. flour and ¼ c. butter until mixture resembles coarse meal. You can use a pastry blender, or two forks or knives to cut it up.
  7. Sprinkle the coarse meal over the pie.
  8. Bake 1 hour or until golden.
  9. Garnish with fresh sliced peaches and serve with vanilla ice cream and garnish with a fresh mint sprig.
  10. Refrigerate leftovers.
