Refreshing Cucumber-Lime Infused Gin and Tonic

REFRESHING CUCUMBER-LIME INFUSED GINE AND TONIC
6 Persian or English cucumbers, divided
8 (2 ½” long) strips lime rind
1 ½ c. gin
½ c. fresh lime juice
1 lime, thinly slice
5 c. tonic water, chilled

  1. Cut 4 cucumbers into ¼” thick slices, about 2 c.
  2. Muddle sliced cucumber and rind in large bowl.
  3. Add gin.
  4. Cover and refrigerate overnight or up to 3 days.
  5. Strain cucumber mixture into pitcher.
  6. Add juice.
  7. Slice remaining 2 cucumbers, add to pitcher with sliced lime.
  8. Add tonic water just before serving.
  9. Serve in ice-filled tall glasses.
