QUICK CORN, BACON, BEER AND CHEESE DIP
2 (8-oz.) pkg. of cream cheese, room temp
1 c. IPA beer
5 oz. shredded Parmesan cheese
1 c. shredded mozzarella
1 c. shredded provolone
1 t. black pepper
1 t. paprika
1 t. garlic powder
¼ c. chopped cilantro or parsley
1 (11-oz.) can Mexicorn, drained
1 ¼ c. cooked bacon crumbles
Extra bacon crumbles, garnish
Extra chopped cilantro/parsley, garnish
- Preheat oven 350.
- Place cream cheese, Parmesan, ½ c. Mozzarella and ½ c. Provolone, pepper, paprika and garlic powder in blender or food processor.
- Blend until fully combined. It will be thin.
- Pour mixture into large bowl and stir in corn, bacon, cilantro, remaining Mozzarella and Provolone. Mix well.
- Spoon mixture into oven safe baking dish and sprinkle with extra bacon crumbles.
- Bake 15-20 minutes or until mixture is hot and bubbly.
- Sprinkle with extra cilantro or parsley and serve with chips.
