Peas and Prosciutto
Ingredients
- Good quality olive oil
- 3 shallots, minced
- ½ red onion, finely sliced
- 1 T. minced garlic
- 1 (1 lb.) bag frozen peas, thawed
- 6 oz. (1/8” thick slices) prosciutto, diced
- ¼ c. fresh parsley, chopped
- Salt and fresh black pepper
Instructions
- Drizzle olive oil in bottom of large skillet. Heat to medium-high.
- Add shallots, red onion, garlic and saute until tender. Add salt and pepper.
- Add peas and heat through.
- Stir in prosciutto and cook for 2 minutes.
- Add parsley, remove from heat, mix well and season to taste. Serve.
Notes
*****You can used cooked fresh peas.
