Crunchy Cranberry Broccoli Slaw
Ingredients
- 2 (3-oz.) packages Ramen Noodle Soup, whatever flavor you prefer, save seasoning packet for dressing
- ¾ stick butter
- ¼ c. slivered almonds
- 2 (12-oz.) bags broccoli cole slaw
- ¼ c. sunflower seeds
- 2 chopped green onions, for garnish
- ¾ c. canola oil
- ¼ c. light brown sugar
- ¼ c. apple cider vinegar
- ¼ c. Dijon mustard
- 1 ramen noodle seasoning packet
- Kosher salt, fresh black pepper
Instructions
- Put the noodles in a bag and crush them with a rolling pin or kitchen mallet.
- Melt butter in large skillet over low heat.
- Add the noodles and almonds to skillet and sauté, stirring occasionally.
- Meanwhile, whisk together the canola oil, sugar, vinegar, mustard and noodles seasoning packet.
- Place the broccoli slaw in a bowl and toss with the noodles, almonds and sunflower seeds.
- Pour dressing over salad and toss to coat.
- Taste for seasoning.
- Garnish with green onions.
Notes
*****Can be made day ahead and refrigerate. If you want to wait and garnish with green onions right before serving.
