Peach Tart with Almond Crust
Ingredients
  • 2 c. vanilla wafer cookies (about 5 ounces)
  • ½ c. smoked almonds
  • ¼ c. plus 2 T. sugar
  • 4 T. butter, melted
  • 8 oz. cream cheese, softened
  • ¼ c. sour cream
  • 1 egg
  • 2 firm, ripe medium peaches, peeled and cut into wedges
Instructions
  1. Preheat oven 350.
  2. In food processor, combine wafers, almonds and 2 T. sugar and process until fine.
  3. Add melted butter and pulse until crumbs are evenly moistened.
  4. Press the crumbs into bottom and ½” up the side of 9”sprinform pan.
  5. Bake 10 minutes or until crust is set.
  6. Wipe out processor. Add cream cheese, sour cream, egg and 2 T. sugar and process until smooth.
  7. Pour the custard into crust and bake 15 minutes until set.
  8. Let tart cool and transfer to freezer to chill, about 12-15 minutes.
  9. In bowl, toss peaches with remaining 2 T. sugar.
  10. Arrange peaches in 2 concentric circles over the custard.
  11. Remove ring, cut into wedges and serve.
Notes
*****A nice dollop of whipped cream is great!
