Oven-Baked Goodie Onion Rings

OVEN-BAKED GOODIE ONION RINGS
1 large onion
½ c. FIBER ONE ORIGINAL CEREAL
½ t. garlic powder
Salt, black pepper to taste
4 eggs, beaten or ½ c. liquid egg substitute
Favorite dipping sauce
- Preheat oven 375.
- Slice ends of onion off, remove outer layer.
- Cut onion into ½” wide slices and separate into rings. Set aside.
- With food processor, grind the cereal to a bread-crumb like consistency.
- Season crumbs with garlic powder, salt and pepper and place on a plate or bowl.
- Place beaten eggs in a smaller bowl.
- Spray baking sheet with PAM.
- One at a time, dip each ring into the beaten egg, shake off excess and then coat with crumbs.
- Evenly place rings on baking sheet.
- Bake until outsides are crispy and insides are soft, 20-30 minutes. Carefully flip half way through cooking.
- Serve with favorite dipping sauce: catsup, mustard, etc.
*You can change up cereal for the crumb mixture.
