Oven-Baked Goodie Onion Rings

OVEN-BAKED GOODIE ONION RINGS
1 large onion
½ c. FIBER ONE ORIGINAL CEREAL
½ t. garlic powder
Salt, black pepper to taste
4 eggs, beaten or ½ c. liquid egg substitute
Favorite dipping sauce

  1. Preheat oven 375.
  2. Slice ends of onion off, remove outer layer.
  3. Cut onion into ½” wide slices and separate into rings. Set aside.
  4. With food processor, grind the cereal to a bread-crumb like consistency.
  5. Season crumbs with garlic powder, salt and pepper and place on a plate or bowl.
  6. Place beaten eggs in a smaller bowl.
  7. Spray baking sheet with PAM.
  8. One at a time, dip each ring into the beaten egg, shake off excess and then coat with crumbs.
  9. Evenly place rings on baking sheet.
  10. Bake until outsides are crispy and insides are soft, 20-30 minutes. Carefully flip half way through cooking.
  11. Serve with favorite dipping sauce: catsup, mustard, etc.
    *You can change up cereal for the crumb mixture.
