One-Pot Meal of Shrimp, Cannellini Beans and Couscous
ONE-POT MEAL OF SHRIMP, CANNELLINI BEANS AND COUSCOUS
1 (10-oz.) box couscous
¼ t. salt
4 t. butter, divided
2 T. minced garlic
4 green onions, chopped
1 lb. medium shrimp, peeled and deveined
1 (15.5-oz.) can cannellini beans, rinsed and drained
½ c. chopped fresh parsley
¼ c. fresh lemon juice
Salt, red/black pepper, to taste
1. Bring 2 c. water to boil and add couscous and ¼ t. salt.
2. Remove from heat, cover and let stand 5 minutes. Fluff with fork.
3. Heat 2 t. butter in large skillet over medium heat.
4. Add garlic and green onions, cook for 30 seconds.
5. Season shrimp with salt, red/black pepper and add to skillet and cook until they turn pink, 3-4 minutes.
6. Stir in beans, parsley, lemon juice, rest of butter. Cook 2-4 minutes or until heated through. Taste for seasoning.
7. Serve with couscous.
*****You can mix all ingredients and spread in baking dish and serve as a casserole. If need to heat, cover with foil and place in 325 oven and heat until hot.
