Mississippi Mud Deep-Dish Cookie in a Skillet
Ingredients
- 1 c. packed light brown sugar
- ½ c. sugar
- ½ c. salted butter, softened
- 1 large egg
- 5 T. whole milk
- 1 ½ t. vanilla
- 2 c. flour
- 1 t. baking soda
- ¼ t. salt
- 3 T. unsweetened cocoa
- 1 ½ c. semisweet chocolate chips, divided
- ¼ c. miniature marshmallows
- Ice cream or cool whip
Instructions
- Preheat oven 325.
- Lightly coat 10” cast-iron skillet with PAM.
- Beat brown sugar, sugar and butter with mixer until light and fluffy.
- Add egg, milk and vanilla and beat until blended.
- Whisk together flour, baking soda, salt and cocoa in a bowl.
- Add to butter mixture gradually beating low until combined.
- Add 1 c. chips, beat until combined.
- Spread mixture into skillet.
- Top with remaining chips.
- Bake for 45-50 minutes, until golden. During the last 30 minutes of baking, topping with marshmallows and finish baking.
- Let stand 15 minutes, cut into wedges.
- Serve with ice cream or cool whip.
