Mighty Irish Potato Cakes
Ingredients
- 2 c. leftover mashed potatoes
- ⅓ c. flour, plus extra for rolling surface
- 2 T. milk
- 1 T. chopped mixed herbs (or your favorites)
- Salt, black pepper
- 2 T. butter or olive oil
Instructions
- Combine the potatoes, flour, milk and herbs, in a bowl until smooth. Taste for seasoning.
- Divide into 4 balls on a floured surface and flatten into 3” patty.
- Heat the butter or olive oil in a large skillet over medium heat.
- Add patties and cook until golden brown on each side. Add more butter or olive oil as needed.
- Remove from pan and drain on paper towel.
- Sprinkle with extra salt.
