Maw-Maw's Springtime Pasta
Ingredients
- 1 lb. box of Radiatore Pasta or some crazy curly type (it just looks more intriguing)
- 1 lb. ground chicken, meat or turkey or Italian sausage (out of the casing)
- 1 large onion, chopped
- 1 lb. fresh asparagus, washed, stemmed and cut into small pieces
- Juice of 2 lemons
- Zest of 1 lemon
- Salt, black pepper
- 1 t. dried basil
- 1 t. dried oregano
- Red pepper flakes
- Freshly grated parmesan cheese
- Olive oil
Instructions
- Boil the pasta in salted water and also add about 2 T. olive oil. Follow directions on package. Drain and set aside.
- In large skillet, drizzle a little olive oil in bottom and place over medium-high heat.
- Add the ground chicken and chopped onions. Season with salt and black pepper
- Cook until chicken is done, meanwhile, break it up into crumbles. Do not worry about the extra liquid in pan, the pasta will absorb it.
- Add the asparagus and saute another 2-3 minutes.
- Add the cooked pasta and mix well.
- Add the lemon juice, zest, basil, oregano and red pepper flakes. Taste for seasoning. If you need more salt and pepper, add it.
- Place the pasta dish in a nice serving platter and grate fresh parmesan cheese on top and serve.
Notes
*****This was a dish my mother made in the spring with Italian sausage and fava beans. I thought I would lighten it up with the ground chicken. You can actually do a mixture of chicken and sausage. I used asparagus because fresh fava beans are hard to find. When my dad was alive he always had them in his garden. I sure miss those fava beans. But the lemon gives it a nice clean crisp taste. This pasta dish is quite nice because it is not a heavy sauce! You can add whatever veggies you like!
