Maw-Maw’s Delicious Banana Pudding

1 (12-oz.) package of Vanilla Wafers
1 (5.1-oz.) box vanilla instant pudding or banana cream instant pudding
2 c. milk
1 t. vanilla
1 (14-oz.) can Eagle Brand sweetened condensed milk
1 (8-oz.) carton Cool Whip
4 large bananas, sliced
Toasted coconut for topping, if desired
Finely chopped pecans for topping, if desired
1. In a 2 quart casserole dish, layer the vanilla wafers. Set aside some for topping, if desired.
2. Make pudding according to package directions using the 2 c. milk.
3. Add the vanilla, condensed milk and Cool whip. Blend together.
4. Layer the casserole with sliced bananas on top of wafers.
5. Spread pudding over the bananas.
6. Top with toasted coconut, pecans and crumble up some of the leftover wafers.
7. Cover with plastic wrap and place in refrigerator for at least 2 hours. Keep in refrigerator when not eating.
