Maw-Maw's Coconut Cream Pie
Ingredients
- ¾ c. sugar
- ¼ c. cornstarch
- ¼ t. salt
- 2 c. milk
- 3 egg yolks
- 2 T. butter
- 1 t. vanilla
- 1 c. flaked coconut
- 1 baked 9” pie shell
- 1 c. whipping cream
- ¼ c. sifted powdered sugar
- Toasted flaked coconut, garnish
Instructions
- Combine first 3 ingredients in heavy saucepan. Gradually stir in milk.
- Cook over medium heat, stirring constantly, until thickened and bubbly. Cook 1 minute.
- Beat egg yolks.
- Gradually stir about ¼ of hot mixture into yolks. Add remaining hot mixture, stirring constantly. Cook, stirring constantly, 1 minute or until temperature reaches 160.
- Remove from heat.
- Stir in butter, vanilla and 1 c. flaked coconut.
- Pour into baked shell. Cool completely. Cover and chill for 1-2 hours.
- Beat whipping cream at high speed with clean beaters until foamy.
- Gradually add powdered sugar, 1 T. at a time. Beating until soft peaks form.
- Pipe or spoon topping onto pie. Garnish with toasted coconut.
