Marinated Four Bean Salad
Ingredients
- 1 (17-oz.) can lima beans, rinsed and drained
- 1 (16-oz) can cut green beans, rinsed and drained
- 1 (16-oz.) can cut wax beans, rinsed and drained
- 1 (16-oz.) can kidney beans, rinsed and drained
- 1 large green bell pepper, chopped
- 1 large Vidalia onion, chopped finely
- 1 (2-oz.) jar diced pimiento, drained
- ½ c. sugar
- ½ c. olive oil
- 1 c. white vinegar
- 2 t. salt
- 2 t. black pepper
Instructions
- Place the rinsed and drained beans in a large bowl.
- Add the bell pepper, onion and pimento. Mix well.
- In a small saucepan, combine the sugar, oil, vinegar, salt and pepper. Bring to a boil over low heat, stirring until sugar dissolves.
- Pour mixture over beans. Stir gently to mix.
- Cover and chill for at least 6 hours.
- Serve with slotted spoon or drain off the juice and save for another time.
- This will keep for at least a week. Keep in refrigerator.
