Luscious Pasta Topped with Tuna, Tomato and Lemon

LUSCIOUS PASTA TOPPED WITH TUNA, TOMATOES AND LEMON
Olive oil
Kosher salt, black pepper
4 c. mixed colors of cherry tomatoes
1 T. minced garlic
1 (6-oz.) can light tuna in oil, drained and separated into chunks
4-6 jarred pepperoncini peppers, minced, seeded and stemmed
2 T. lightly chopped capers
Juice of 1 lemon
1 t. cold butter
Zest of 1 lemon
8 oz. dried angel hair pasta
Chopped fresh parsley
- Cook pasta according to package directions. Drain well.
- In 12” skillet, drizzle olive oil into bottom and place over medium heat.
- When very hot, add the tomatoes and cook until they collapse and juices run and starts to thicken.
- Add garlic and cook 30 seconds.
- Remove pan from heat and stir in tuna, peppers, capers, lemon juice, zest and butter.
- Season sauce with salt and pepper and keep warm until pasta is done.
- Arrange pasta in individual bowls and top with sauce and parsley.
