Lemony Grilled Corn Coleslaw
Ingredients
- 4-6 ears of fresh corn
- 10 c. thinly sliced green cabbage
- ½ of each color bell pepper (red, yellow, orange, green) chopped
- ½ c. chopped fresh parsley
- ¼ c. fresh chopped dill
- ⅓ c. fresh lemon juice
- 3 T. lemon zest
- 2 T. chopped fresh dill
- 2 T. honey
- 1 T. minced garlic
- 1 T. Dijon mustard
- ⅓ c. extra-virgin olive oil
- Salt and black pepper to taste
Instructions
- Heat grill to medium. Brush grill with vegetable oil.
- Grill corn, turning once, until kernels begin to char. Cut kernels from cob.
- Combine corn, cabbage, bell pepper, parsley and ¼ c. of dill in large bowl. Set aside.
- For the dressing: Whisk together the lemon juice, zest, 2 T. dill, honey, garlic and mustard. Gradually whisk in oil. Season to taste.
- Pour over the cabbage mixture. Stir to mix and taste for seasoning.
