Khalua Glazed Carrots
Ingredients
- 3 c. diagonally sliced carrots
- 1 T. butter
- 1 T. brown sugar
- 1 T. honey
- 3 T. Kahlua or other coffee-flavored liqueur, divided
- 1 t. cornstarch
- ½ t. salt
- 3 slices bacon, cooked and crumbled
- 1 T. freshly chopped parsley
Instructions
- Place carrots in veggie steamer over small amount of boiling water. Cover and steam 5 minutes or until tender. Remove from heat.
- Melt butter in large skillet. Stir in brown sugar, honey and 2 T. of Kahlua. Cook until bubbly.
- Combine 1 T. Kahlua and cornstarch, stir well. Add to brown sugar mixture.
- Stir in salt. Continue cooking until thickened and bubbly.
- Add carrots and toss gently to coat. Cook just until carrots are thoroughly heated.
- Spoon into serving dish. Sprinkle with crumbled bacon and chopped parsley.
