Irresistible Spaghetti with Spinach-Avocado Sauce
Ingredients
- 8 oz. uncooked whole-grain spaghetti
- 1 c. baby spinach leaves
- ¼ c. rinsed and drained cannellini beans (canned)
- ¼ c. fresh basil leaves
- 3 T. olive oil
- 1 T. lemon zest
- 2 T. fresh lemon juice
- Kosher salt, black pepper
- 2 garlic cloves
- 1 ripe peeled avocado
- ¼ c. chopped ripe tomato
- 3 T. sliced almonds, toasted
Instructions
- Prepare pasta according to package directions, omit salt and fat.
- Reserve ½ c. of pasta liquid. Drain pasta.
- Combine pasta liquid, spinach, beans, basil leaves, olive oil zest, salt, pepper, garlic cloves and avocado in a food processor.
- Process until smooth.
- Combine pasta with spinach mixture.
- Toss to coat and taste for seasoning.
- Sprinkle with tomato and almonds.
