Individual Brunch Casseroles

INDIVIDUAL BRUNCH CASSEROLES
3 c. shredded uncooked potatoes
¾ c. diced onion
½ c. diced celery
½ c. diced green bell pepper
2-4 T. canola oil
4 large eggs
Salt, black pepper
1 c. shredded cheddar cheese
½ lb. sliced bacon, cooked and crumbled
1 (4-oz.) can mushroom stems and pieces, drained

  1. Preheat oven 350.
  2. In large skillet, saute potatoes, onion, celery and bell pepper in 2 T. oil until veggies are crisp-tender. If extra oil is needed to keep from sticking, add.
  3. Remove from heat.
  4. In large bowl, whisk eggs, salt and pepper.
  5. Add cheese, bacon and mushrooms. Mix well.
  6. Stir in potato mixture.
  7. Pour into 4 greased individual baking dishes.
  8. Bake uncovered 25-30 minutes or until knife inserted near center comes out clean. Let stand 5 minutes before serving.
