
Individual Brunch Casseroles

INDIVIDUAL BRUNCH CASSEROLES
3 c. shredded uncooked potatoes
¾ c. diced onion
½ c. diced celery
½ c. diced green bell pepper
2-4 T. canola oil
4 large eggs
Salt, black pepper
1 c. shredded cheddar cheese
½ lb. sliced bacon, cooked and crumbled
1 (4-oz.) can mushroom stems and pieces, drained
- Preheat oven 350.
- In large skillet, saute potatoes, onion, celery and bell pepper in 2 T. oil until veggies are crisp-tender. If extra oil is needed to keep from sticking, add.
- Remove from heat.
- In large bowl, whisk eggs, salt and pepper.
- Add cheese, bacon and mushrooms. Mix well.
- Stir in potato mixture.
- Pour into 4 greased individual baking dishes.
- Bake uncovered 25-30 minutes or until knife inserted near center comes out clean. Let stand 5 minutes before serving.
