IMPRESSIVE LOADED TOTCHOS
1 lb. bag of frozen tater tots
2 ripe avocados, halved
4 fresh tomatillos, husks, removed, halved
¼ c. cilantro
½ c. fresh lime juice
1 t. ground cumin
1 T. Kosher salt, divided
1 t. ancho chile powder
3 c. rotisserie chicken, shredded
4 slices cooked bacon, chopped
1 (8-oz.) container white cheese dip, warmed
2 c. charred corn kernels
1/3 c. diced tomato
2-3 fresh jalapenos, seeded, thinly sliced
Garnishes, sour cream, salsa, etc.
- Cook tater tots according to pkg. directions.
- Process avocado, tomatillos, cilantro, lime juice, cumin and 1 t. salt in blender or food processor, until smooth. Stopping to scrape sides.
- Stir together ancho chile powder and 1 t. salt in small bowl.
- Sprinkle this over the hot potato tots.
- Top the tots with shredded chicken and chopped bacon.
- Drizzle with warm cheese dip and avocado mixture.
- Top evenly with corn, tomato and jalapeno slices.
- Serve immediately.
