Ingredients
- 1 (9”) pie shell
- 1 c. whole milk
- 4 large eggs
- 1 t. salt
- 1 t. or more red pepper
- 2 c. Gruyere or Swiss Cheese, grated
- 2 T. flour
- 1 c. chopped good quality ham (I like the diced size)
- Paprika
Instructions
- Preheat oven 350.
- Mix together the milk, eggs, salt and pepper.
- Toss the cheese and flour.
- Add the milk mixture to the cheese mixture, a little at a time.
- Add the ham and mix well.
- Pour the mixture into the pie shell.
- Place the pie on a baking sheet and place in oven and bake for about 1 hour or until inserted knife comes out clean.
Notes
*****When finished cooking do not cover with foil, the crust will become soggy. You can under cook the pie, remove from oven, cool, wrap in saran wrap and then foil and freeze. When ready to use it, remove from freezer and let thaw in refrigerator. Then place in 350 oven to finish cooking and heat through.
You can substitute turkey, chicken, chopped cooked shrimp, crawfish, crab for the ham. You can also use different cheeses. These also work well in the mini pie shells to make individual quiches. This is nice for brunches or parties. They taste good at room temperature.
