Heavenly Chipotle Yam Biscuit Bites
HEAVENLY CHIPOTLE YAM BISCUIT BITES
1 ½ c. flour
4 t. baking powder
½ t. salt
¼ c. butter, cut into ½” pieces, plus more for serving
1 c. mashed cooked yam
¼ c. buttermilk
1 ½ T. minced chipotle pepper in adobo sauce
4 slices peppered bacon, cooked and cut into 2” pieces
- Preheat oven 350. Spray large baking sheet with PAM.
- In large bowl, whisk together flour, baking powder and salt.
- Using a pastry blender, cut in ¼ c. butter until mixture resembles coarse crumbs.
- In small bowl, whisk together yam, buttermilk and chipotle in adobe.
- Add the yam mixture to flour mixture, stirring just until combined. Dough will be sticky.
- Turn dough onto a lightly floured surface and knead 2-3 times.
- Roll dough into 1” thickness and cut dough using 2” round cutter. Rerolling scraps until all dough is used.
- Place on prepared pans.
- Bake 15 minutes or until lightly browned.
- Serve biscuits warm with bacon and additional butter.
