Heavenly Chipotle Yam Biscuit Bites

HEAVENLY CHIPOTLE YAM BISCUIT BITES
1 ½ c. flour
4 t. baking powder
½ t. salt
¼ c. butter, cut into ½” pieces, plus more for serving
1 c. mashed cooked yam
¼ c. buttermilk
1 ½ T. minced chipotle pepper in adobo sauce
4 slices peppered bacon, cooked and cut into 2” pieces

  1. Preheat oven 350. Spray large baking sheet with PAM.
  2. In large bowl, whisk together flour, baking powder and salt.
  3. Using a pastry blender, cut in ¼ c. butter until mixture resembles coarse crumbs.
  4. In small bowl, whisk together yam, buttermilk and chipotle in adobe.
  5. Add the yam mixture to flour mixture, stirring just until combined. Dough will be sticky.
  6. Turn dough onto a lightly floured surface and knead 2-3 times.
  7. Roll dough into 1” thickness and cut dough using 2” round cutter. Rerolling scraps until all dough is used.
  8. Place on prepared pans.
  9. Bake 15 minutes or until lightly browned.
  10. Serve biscuits warm with bacon and additional butter.
