Hearty Chicken, Yam and Corn Crockpot Chowder
Ingredients
- 8 c. chicken broth
- 1 ½ lbs. fresh yams, peeled and cut into ¼” pieces
- 2 (lb.) bone-in skinless chicken breasts
- 2 c. fresh corn kernels
- 2 c. chopped onion
- 1 large red bell pepper, chopped
- 1 large yellow bell pepper, chopped
- 1 c. chopped celery
- Kosher salt, black pepper
- 1 c. heavy cream
- 5 T. cornstarch
- ¼ c. chopped fresh parsley
- Tabasco
- Finely chopped chives
Instructions
- In a 6-quart crock pot combine: broth, yams, breasts, corn, bell peppers, onions, celery and season with salt and pepper.
- Cover and cook on HIGH for about 4 hours, until chicken and yams are tender.
- Remove chicken from pot and coarsely shred, discarding bones. Set aside.
- Whisk together cream and cornstarch in bowl until smooth.
- Stir into soup in crock pot.
- Cover and cook until slightly thickened, about 30 minutes.
- Stir in chicken and parsley. Taste for seasoning.
- Serve with Tabasco and chives as garnish.
