Ingredients
  • 8 c. chicken broth
  • 1 ½ lbs. fresh yams, peeled and cut into ¼” pieces
  • 2 (lb.) bone-in skinless chicken breasts
  • 2 c. fresh corn kernels
  • 2 c. chopped onion
  • 1 large red bell pepper, chopped
  • 1 large yellow bell pepper, chopped
  • 1 c. chopped celery
  • Kosher salt, black pepper
  • 1 c. heavy cream
  • 5 T. cornstarch
  • ¼ c. chopped fresh parsley
  • Tabasco
  • Finely chopped chives
Instructions
  1. In a 6-quart crock pot combine: broth, yams, breasts, corn, bell peppers, onions, celery and season with salt and pepper.
  2. Cover and cook on HIGH for about 4 hours, until chicken and yams are tender.
  3. Remove chicken from pot and coarsely shred, discarding bones. Set aside.
  4. Whisk together cream and cornstarch in bowl until smooth.
  5. Stir into soup in crock pot.
  6. Cover and cook until slightly thickened, about 30 minutes.
  7. Stir in chicken and parsley. Taste for seasoning.
  8. Serve with Tabasco and chives as garnish.
