Healthy Air-Fried Green Tomatoes
HEALTHY AIR-FRIED GREEN TOMATOES
2 large green tomatoes
Salt/black pepper
½ c. flour
2 eggs
½ c. buttermilk
1 c. Panko breadcrumbs
1 c. yellow cornmeal
Olive oil spray
- Cut tomatoes into ¼” slices.
- Pat dry with paper towels and season with salt and pepper on both sides.
- Place flour in shallow dish.
- Whisk eggs and butter milk in another shallow dish.
- Combine Panko and cornmeal in another shallow dish.
- Preheat Air Fryer to 400.
- Coat tomato in flour, dip in egg mixture, then press into Panko mixture (on both sides.)
- Sprinkle a little more salt and pepper on them.
- Mist air fryer basket with olive oil spray and place 4 tomato slices in basket.
- Mist top with oil. Air fry for 5 minutes.
- Flip tomatoes over, mist with oil and air fry another 3 minutes.
- Serve with your favorite sauce.
