Grilled Stuffed Zucchini Rolls
Ingredients
- 3-4 medium zucchini, sliced lengthwise into ¼” slices
- Olive oil
- Salt, black pepper
- 2 oz. soft goat cheese or your favorite soft cheese
- 1 T. freshly minced parsley or chives
- 1 T. fresh lemon juice
- 2 c. baby spinach or kale leaves or mixture of both
- ⅓ c. basil leaves
Instructions
- Discard the outer slices of zucchini and brush both sides of each zucchini strips with the olive oil.
- Season both sides of zucchini with salt and pepper.
- Place on a preheated grill pan until tender, about 4-6 minutes per side.
- In bowl, combine cheese, parsley, and lemon juice. Mash with a fork. Add a little seasoning if needed.
- Put about ½ t. of cheese mixture about ½” from the end of the zucchini slice.
- Top with a few spinach leaves and small pieces of basil.
- Roll up and place seam side down on serving platter.
