Grilled Salmon on Cedar Planks
Ingredients
- 1 cedar plank (6x14”)
- 2(10-12 oz., each) fresh salmon fillets
- Sea salt and fresh black pepper
- ½ c. Dijon mustard
- ½ c. light brown sugar
- Lemon slices, garnish
Instructions
- Soak the planks in salted water for 2 hours. Drain.
- Remove skin from salmon. Remove any bones. Rinse under cold water and pat dry with paper towels.
- Season all sides with salt and pepper.
- Lay what was the skin side of salmon on the cedar plank.
- Spread the mustard over the top and sides.
- In a bowl, crumble the sugar and sprinkle over the mustard.
- Set grill for indirect heating and heat to medium-high. Place plank in center of hot grate, away from heat.
- Cover grill and cook for 20-30 minutes, depending on size of fillets. Internal temp should be 135.
- Transfer the plank with salmon and serve right off the plank.
- Serve with lemon slices.
